New Bagel of the Month - Onion and Cracked Pepper

Recently, I’ve been getting this strange feeling of déjà vu. It’s not a negative feeling - more like one of nostalgia. And it has led me to create June’s bagel flavour of the month, so it’s even better for you guys! But before I tell you what this delicious new flavour is, let me explain where this déjà vu is coming from.

Early in the morning, I drive to the brand new Bagel or Beigel unit with Poppy, my daughter and - more importantly - CEO of the company and Chief Product Tester. We bundle up in the cold weather (because the UK has decided to skip spring and extend winter by two months), and hop in our van to mark the start of the day. On the way, Poppy selects some tunes for the radio and we hum a little and chat about our day-to-days. The sun shines, the music plays, and all of a sudden, I’m not driving anymore.

Instead, I’m a little kid in the passenger seat of my dad’s car. We’re back in Canada, heading through town in the cold sunshine, humming tunes and talking about our day-to-days. The mornings seemed much longer back then; now they whizz by in a flash. We used to drive down to our local bakery and deli to pick up Sunday breakfast to bring back home, and I remember the smells, tastes and sights vividly. The warm scent of fresh baked goods; the juicy meats from the deli counter; and the shimmer of flour as it wafted through the air and caught the sun.

One of my favourite buns was flavoured with onion and black pepper. I would bite into it and get that instant umami sensation, mixed with the moist texture from the caramelisation and a kick from the pepper. It was perfect with a few slices of smoked salmon, maybe even alongside some scrambled egg. This combo still makes me think back to those Sunday bakery trips and breakfast with my family.

Now, instead of eating the bagels, I’m making the bagels (although I still do a lot of the eating, too). And I’d love for your kids to get that same feeling of déjà vu when they eat a bagel in 20 years time, and think back to when a bearded ginger guy and his daughter would rock up to your front door to deliver Sunday breakfast.

This month’s flavour is - you guessed it - onion and cracked pepper. As I mentioned, it goes down a treat with smoked salmon, but it also works insanely well with our salt beef. Or, if you’re vegan, you might enjoy it with a very special line of hummus that we’ll be launching soon (more on this later!). June’s bagel has a knot in the middle - a bit like a pretzel, but not quite - so don’t be surprised if your bagels arrive holeless! It’s not a bad batch. We don’t make those.
